As the Mercato Centrale gets more and more touristy it will become more important to hit up these spots while they are authentic.
Da Nerbone is a location that is bound to head towards the touristy considering the path the rest of the market is taking and how delicious it is. For the time being though, it is still mostly locals crowding around the shop most days.
At Nerbone you can sit or stand, you can have your choice of pasta or entree from whatever is available that day or you can grab a sandwich.
Most crowding is done around the portion of the shop that serves up the sandwiches. The choices are lampredotto (cow stomach), bollito (boiled meat), turkey or roast beef. Sandwiches cost between 3-4 euro.
Don't be afraid to try the cow stomach, it's part of taking in the culture! Also, get some green and red (spicy) sauce on your sandwich for the full experience.
The market (therefore Nerbone) closes around 2 and is not open on Sunday.
